DECEMBER 17- Arrival to Vigo
- 21:30 Welcome dinner. Participants will have dinner in one of the most prestigious restaurants of the city, where they could taste local dishes accompanies by Galician wines.
DECEMBER 18 - Gastronomy-focused day in Vigo
- 09:00 - Visit to the Market. One of the best chefs of our city will be our liaison between the secrets of the sea and preparation of the best fish and seafood dishes. Our incredible guide will tell us about the dishes that we will be working on and the key steps for making them. Taking a shopping cart along, we'll head off to the market in order to buy the ingredients for our dishes.
- 10:00 Boat trip with an introduction to the art of fishing.Nauja, an antique motor and sailing boat, was built about a century ago for fishing in the northern seas and now it forms part of the city’s nautical landscape. This will be our first encounter with the sea that surrounds and nourishes our city. On this trip we will be accompanied by an old sailor, who will share with us many funny stories, happy memories and a wealth of his sea experience. We’re in for a great conversation and a leisurely boat ride, where we’d also get introduced to the traditional art of fishing, typical of this area.
- 14:00 Kitchen workshop. Under the careful guidance of our chef we will prepare some traditional dishes as well as some new signature creations developed by Galician cuisine d'auteur.
- 15:00 Lunch. To finish up, the only thing left to do - would be getting together to taste all the dishes prepared in this unforgettable environment. Enjoy your meal!
- 17:00 Free time. Some time to rest after a fine meal.
- 19:00 Gastronomy event. This event is dedicated to the analysis and reflection about tourism and possibilities brought by the internet and new 2.0 tools as the principal distribution channels.
- 21:00 Tapas in the Old City. The best way to end this day would be the tapas-tasting round at the historical district of the city. This will be a culinary route through the most traditional bars, filled with a magic environment of the streets in the Old City.
DECEMBER 19 - Farewell breakfast
- 9:00 Special farewell breakfast . We will conclude our gastronomic event with a very special farewell breakfast.

Holds a History degree from the University of Salamanca, although his interest in the business world brought him to pursue further studies, such as obtaining a Master’s degree in Marketing and Communication (UIC) and the Executive MBA (IE). He founded two enterprises in the communications field and has worked as a manager in a third one. Currently, Txaber is a freelance consultant who offers advice to top managers, associated professor at the University of Tarragona and a consultant at the Universitat Oberta de Catalunya (UOC) in the business management department.
